Protein & Marinade
- 1 lb boneless, skinless chicken breasts
- 2 cloves garlic, minced
- Zest of 1 lime
- Juice of 2 limes
- 2 tbsp honey
- 2 tbsp olive oil
- Salt & black pepper, to taste
Produce
- 2 ripe avocados, diced
- ÂĽ cup chopped fresh cilantro
- Extra lime juice (for avocado to prevent browning)
Grains
- 2 cups cooked white or brown rice (cooled slightly)
🥄 Instructions
1. Marinate the Chicken
In a bowl, mix together:
- Garlic, lime zest, lime juice, honey, olive oil, salt, and pepper.
Add chicken and marinate for at least 30 minutes (up to 2 hours) in the fridge.
2. Cook the Chicken
- Grill or pan-sear chicken over medium heat for about 5–6 minutes per side or until cooked through.
- Let rest for 5 minutes, then slice or dice.
3. Prepare the Avocado
- Dice avocados and toss with a little lime juice and salt to taste.
4. Assemble the Stack
Use a food ring or small bowl to layer:
- Bottom: ½ cup rice
- Middle: Sliced chicken
- Top: Diced avocado
- Garnish with chopped cilantro and a drizzle of extra honey-lime dressing (optional)
5. Serve
Gently remove the mold or invert the stack from the bowl, and serve immediately!
