Protein & Marinade

  • 1 lb boneless, skinless chicken breasts
  • 2 cloves garlic, minced
  • Zest of 1 lime
  • Juice of 2 limes
  • 2 tbsp honey
  • 2 tbsp olive oil
  • Salt & black pepper, to taste

Produce

  • 2 ripe avocados, diced
  • ÂĽ cup chopped fresh cilantro
  • Extra lime juice (for avocado to prevent browning)

Grains

  • 2 cups cooked white or brown rice (cooled slightly)

🥄 Instructions

1. Marinate the Chicken

In a bowl, mix together:

  • Garlic, lime zest, lime juice, honey, olive oil, salt, and pepper.
    Add chicken and marinate for at least 30 minutes (up to 2 hours) in the fridge.

2. Cook the Chicken

  • Grill or pan-sear chicken over medium heat for about 5–6 minutes per side or until cooked through.
  • Let rest for 5 minutes, then slice or dice.

3. Prepare the Avocado

  • Dice avocados and toss with a little lime juice and salt to taste.

4. Assemble the Stack

Use a food ring or small bowl to layer:

  1. Bottom: ½ cup rice
  2. Middle: Sliced chicken
  3. Top: Diced avocado
  4. Garnish with chopped cilantro and a drizzle of extra honey-lime dressing (optional)

5. Serve

Gently remove the mold or invert the stack from the bowl, and serve immediately!
