🔥 Instructions
- Prep Oven & Chickpeas
Preheat oven to 400°F.
Drain and rinse chickpeas well.
Pat dry thoroughly with a kitchen towel, removing loose skins. Let air dry until completely dry. - Roast
Line a baking sheet with a silicone baking mat or parchment paper (spray parchment lightly with oil).
Spread chickpeas evenly and roast for 20–30 minutes, stirring every 10 minutes until golden brown and crispy. - Make Seasonings
While roasting, combine each set of spice ingredients in separate small bowls. - Season Chickpeas
Remove roasted chickpeas and divide into 3 bowls.- 🧂 Ranch & Spicy: Drizzle each bowl with ½–1 tbsp olive oil, toss. Then add their respective seasonings and toss again to coat.
- 🍯 Sweet: Mix maple syrup and cinnamon, pour over chickpeas, toss to coat. Return to oven and bake for 5–10 minutes more to set glaze.
- Serve Immediately
Enjoy as a snack, or use as a crunchy salad topping.
🧊 Storage
Store in an airtight container at room temperature for up to 3 days. Note: Chickpeas will lose crispiness over time and become chewier.
💡 Tips & Variations
- Use dried chickpeas (cooked and dried) for even crispier results.
