🛒 Ingredients

Base:

  • 3 (15 oz) cans organic low-sodium chickpeas (1 can per flavor)
  • 1–2 tbsp olive oil

🍯 Sweet (Maple Cinnamon):

  • 1 tbsp pure maple syrup
  • ½ tsp ground cinnamon

🌿 Ranch (Herby & Savory):

  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp dried dill
  • ½ tsp dried parsley
  • ½ tsp salt

🌶️ Spicy (Bold & Smoky):

  • ½ tsp chili powder
  • ½ tsp cumin
  • ½ tsp paprika
  • ½ tsp cayenne pepper (adjust for heat)
  • ¼ tsp garlic powder
  • ¼ tsp salt

🔥 Instructions

  1. Prep Oven & Chickpeas
    Preheat oven to 400°F.
    Drain and rinse chickpeas well.
    Pat dry thoroughly with a kitchen towel, removing loose skins. Let air dry until completely dry.
  2. Roast
    Line a baking sheet with a silicone baking mat or parchment paper (spray parchment lightly with oil).
    Spread chickpeas evenly and roast for 20–30 minutes, stirring every 10 minutes until golden brown and crispy.
  3. Make Seasonings
    While roasting, combine each set of spice ingredients in separate small bowls.
  4. Season Chickpeas
    Remove roasted chickpeas and divide into 3 bowls.
    • 🧂 Ranch & Spicy: Drizzle each bowl with ½–1 tbsp olive oil, toss. Then add their respective seasonings and toss again to coat.
    • 🍯 Sweet: Mix maple syrup and cinnamon, pour over chickpeas, toss to coat. Return to oven and bake for 5–10 minutes more to set glaze.
  5. Serve Immediately

🧊 Storage

Store in an airtight container at room temperature for up to 3 days. Note: Chickpeas will lose crispiness over time and become chewier.
