Stuffed Pork Chops in Air Fryer

Pork Medallions Stuffed with Crawfish and Bacon – Simple Recipe

Hey everyone! Today, we’re cooking up a delicious and easy dish with pork medallions, crawfish, and bacon. This is a fun collaboration with my buddy L from No Hippy Barbecue and Cooking. We’re both making pork in our air fryers. L’s using an ActiFry, and I’ve got my Dongy air fryer. Let’s see how this turns out!

Ingredients:

  • Pork medallions
  • Bacon (thin cut)
  • Crawfish (you can use frozen crawfish if you want)
  • Cajun sausage (or any sausage you like)
  • Seasoning (to taste)

Steps:

  1. Prepare the Pork:
    First, trim the fat off the pork medallions. Then, carefully cut a pocket in the middle of the pork with a sharp knife. Make sure you don’t cut yourself! This pocket will hold all the delicious stuffing.
  2. Prepare the Filling:
    For the filling, I’m using Cajun sausage. If you can’t find loose sausage, just remove the sausage from its casing. I also have crawfish that I picked up when I was in Louisiana. If you don’t have crawfish, you can skip it or use something else you like.
  3. Stuff the Pork:
    Next, stuff the pork with the filling. Just use your hands to pack it in tightly. Fill the pocket completely with the sausage and crawfish mixture.
  4. Wrap in Bacon:
    Now, wrap the stuffed pork with thin slices of bacon. Use as many slices as you need to cover the pork and seal everything up. No oil is needed because the bacon grease will do the job!
  5. Cook in the Air Fryer:
    Place the wrapped pork in the air fryer. For my air fryer, I use a special tool that holds everything in place. The bacon will cook up nicely, and the pork will be done when the bacon is crispy. If you have an ActiFry, you can remove the paddle and cook it just fine. Be sure to flip the pork halfway through if you need to.
  6. Cooking Time:
    I cooked mine for 20 minutes at setting 3, flipped it, and cooked for another 5 minutes on setting 4. The pork will be tender, juicy, and delicious once it’s done!
  7. Taste Test:
    Once it’s ready, let it cool for a few minutes before slicing. When you cut into it, you’ll have a perfect bite of bacon, pork, and crawfish. The flavor is amazing! The pork stays juicy, and the bacon is crispy.
