🧂 Ingredients
- 4 flour tortillas (8-inch size)
- 1 cup hummus (store-bought or homemade)
- 1 cup crumbled feta cheese
- 1 cup shredded mozzarella cheese
- ½ cup Kalamata olives, pitted and chopped
- ½ cup sun-dried tomatoes, chopped
- ½ cup fresh spinach or arugula, chopped
- 1 small red onion, thinly sliced
- 1 tbsp olive oil (for grilling)
- 1 tsp dried oregano
- Salt & pepper, to taste
🔪 Instructions
1. Prepare the Ingredients
Chop olives, sun-dried tomatoes, spinach, and onion. Mix the mozzarella and feta in a small bowl.
2. Assemble the Quesadillas
Spread hummus over one side of each tortilla.
Layer spinach, sun-dried tomatoes, red onion, olives, and cheese.
Sprinkle oregano, salt, and pepper.
Top with another tortilla (hummus side in).
3. Cook
Heat olive oil in a skillet over medium heat.
Cook each quesadilla for 2–3 minutes per side until golden and cheese is melted. Press gently with a spatula for even browning.
4. Serve
Cool slightly, slice into wedges, and serve with tzatziki, cucumber salad, or extra hummus.
