  • 2 cups shredded cheddar cheese, divided
  • 1 cup cooked bacon, crumbled (about 8 slices)
  • ½ cup sour cream
  • ¼ cup mayonnaise (optional, for extra creaminess)
  • 2 tbsp olive oil
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • Salt & black pepper to taste
  • 2 tbsp chopped green onions or parsley (for garnish, optional)

🔥 Instructions

1. Preheat Oven

  • Set oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish.

2. Prepare Potatoes

  • In a large bowl, toss diced potatoes with:
  • Olive oil,
  • ½ packet of ranch seasoning,
  • Garlic powder, onion powder,
  • Salt & pepper
  • Spread evenly in the baking dish.

3. Bake Potatoes

  • Bake uncovered for 20–25 minutes, stirring halfway, until potatoes begin to soften.

4. Add Chicken and Cheese

  • While potatoes bake, toss cubed chicken with the remaining ranch seasoning.
  • After 25 minutes, remove dish, add chicken and 1 cup cheese on top.
  • Return to oven and bake for another 20 minutes.

5. Finish with Toppings

  • In a small bowl, mix sour cream and mayo (if using).
  • Spoon or spread mixture over the casserole.
  • Top with remaining 1 cup cheese and crumbled bacon.
