- 2 cups shredded cheddar cheese, divided
- 1 cup cooked bacon, crumbled (about 8 slices)
- ½ cup sour cream
- ¼ cup mayonnaise (optional, for extra creaminess)
- 2 tbsp olive oil
- ¼ tsp garlic powder
- ¼ tsp onion powder
- Salt & black pepper to taste
- 2 tbsp chopped green onions or parsley (for garnish, optional)
🔥 Instructions
1. Preheat Oven
- Set oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish.
2. Prepare Potatoes
- In a large bowl, toss diced potatoes with:
- Olive oil,
- ½ packet of ranch seasoning,
- Garlic powder, onion powder,
- Salt & pepper
- Spread evenly in the baking dish.
3. Bake Potatoes
- Bake uncovered for 20–25 minutes, stirring halfway, until potatoes begin to soften.
4. Add Chicken and Cheese
- While potatoes bake, toss cubed chicken with the remaining ranch seasoning.
- After 25 minutes, remove dish, add chicken and 1 cup cheese on top.
- Return to oven and bake for another 20 minutes.
5. Finish with Toppings
- In a small bowl, mix sour cream and mayo (if using).
- Spoon or spread mixture over the casserole.
- Top with remaining 1 cup cheese and crumbled bacon.
6. Final Bake
