Easy Roasted Carrots and Asparagus Recipe

🥕 Ingredients You’ll Need:
- Baby carrots (cut in half lengthwise)
- Asparagus (with the tough ends cut off)
- Olive oil or avocado oil
- Salt
- Black pepper
- Minced garlic
🥣 Simple Steps to Cook:
- Prepare the Veggies:
- Wash the baby carrots and cut them in half lengthwise. This helps them cook faster and taste better.
- Cut off the hard ends of the asparagus and wash them too.
- Add Flavor:
- Drizzle a little oil (olive or avocado) over the veggies.
- Sprinkle salt, black pepper, and minced garlic.
- Rub or toss everything together so the veggies are nicely coated. (You can do this on the baking tray or in a bowl.)
Optional: You can also add garlic powder or onion powder if you like, but this recipe keeps it nice and simple.
- Start Roasting:
- Preheat your oven to 425°F (about 220°C).
- First, place only the carrots on a baking tray lined with parchment paper.
- Roast them for 8 minutes.
- Add the Asparagus:
- After 8 minutes, take the tray out and flip the carrots.
- Make some space and add the asparagus to the tray.
- Put everything back in the oven and roast for another 8 to 10 minutes.
Note: If your asparagus or carrots are thicker, they might need more time to cook.

- Once everything looks roasted and slightly golden, take the tray out.
- You can brush a little melted butter over the top for extra flavor—yum!
