One-Pan Chicken and Mushrooms in Creamy Herb Sauce: A Simple, Delicious Recipe

Hi everyone! Natasha here from Natashaskitchen.com, and today I’m sharing a family favorite recipe: One-Pan Chicken and Mushrooms in a creamy herb sauce. This dish is not only incredibly easy to make, but it’s also full of juicy, tender chicken and flavorful mushrooms. Plus, it’s been a hit in our family for years!

Ingredients and Prep:

Before you begin, let’s prepare the ingredients:

  • Mince 2 garlic cloves.
  • Finely chop a quarter cup each of fresh green onions, parsley, and dill. Don’t worry about the amount of herbs—it’s what makes the sauce so tasty!
  • Slice half a pound of mushrooms. I’ve rinsed mine and patted them dry with paper towels.
  • For the chicken, you’ll need 1 pound of chicken tenders. These are great because they’re already tender and require no prep. Season them with 1 teaspoon of garlic salt and some black pepper.

Cooking the Dish:

  1. Heat a large, deep pan over medium heat. Add half a tablespoon of oil and half a tablespoon of butter.
  2. Once the pan is hot, add the mushrooms. Sprinkle with half a teaspoon of garlic salt. Cook them, stirring occasionally, until they turn golden brown. Remove them from the pan and set them aside.
  3. Add a bit more oil and butter to the pan, then place the chicken tenders one at a time. Don’t add them all at once, or it’ll cool down the pan. Cook the chicken for 2 minutes on each side until it’s just cooked through.
  4. Create a little space in the center of the pan and add the minced garlic. Sauté it for about a minute until it smells fragrant. Then, add your chopped herbs and cook for another minute, stirring constantly to soften the herbs.
  5. Return the cooked mushrooms to the pan, then add ¾ cup of whipping cream. Bring it to a light boil and cook for another 2 minutes until the sauce thickens a bit. Season with more garlic salt if needed.

Taste Test:

Now it’s time to dig in! Before you take a bite, add a little extra parsley on top for garnish—just because it makes it look even better. This dish is super tasty with pasta, rice, or mashed potatoes.

The chicken is so juicy, and the sauce is creamy and full of fresh flavors from the herbs. If you’re not a fan of mushrooms, you can easily skip them since they’re thickly sliced, but I promise the mushrooms really add something special to this dish.
