🛒 Ingredients
Chicken:
- 2 boneless skinless chicken breasts (cut in half lengthwise)
- 1 tablespoon olive oil
- 4 garlic cloves, minced
- 1 teaspoon cumin
- Kosher sea salt, to taste
- Black pepper, to taste
- Juice of 1 lime

Rice & Garnish:
- 4 cups chicken stock
- 2 cups basmati rice (or jasmine)
- Juice of 2 limes
- ½ bunch fresh cilantro, chopped
- 1 cup cherry tomatoes, halved or chopped
🥘 Instructions
- Marinate the Chicken:
Add the chicken, olive oil, garlic, cumin, salt, pepper, and juice of 1 lime to a resealable bag. Let marinate at room temp for 15–20 minutes. - Cook the Chicken:
Heat a skillet over medium-high. Cook chicken for 3–5 minutes per side, or until internal temp reaches 165°F. Remove, rest 10 minutes, and slice. - Make the Rice:
In the same skillet, pour in chicken stock. Scrape the bottom to deglaze. Add juice of 2 limes and rice. Simmer over low heat for 10 minutes, covered. - Steam:
Once liquid is absorbed, remove from heat and steam rice, covered, for 5 more minutes. - Assemble Bowls:
Stir chopped cilantro into the rice. Top with sliced chicken and cherry tomatoes. Serve warm.
