How to Make Easy and Delicious Barbacoa in a Crock-Pot

Hi friends! Today, I’m going to show you how to make a super tasty and simple barbacoa (a flavorful shredded beef dish) using a crock-pot (slow cooker). It’s very easy to make, and the meat comes out so soft and full of flavor. Let’s get started!

🛒 Ingredients You Will Need:

For the meat:

  • 4 pounds of chuck roast (cut into big chunks)
  • Salt (to season the meat)
  • Vegetable oil or olive oil (for cooking)

For the sauce:

  • 5 dried chipotle chiles
  • 1 cup chicken broth
  • ½ cup vinegar
  • Juice from 3 limes
  • 1 whole white onion (cut in half)
  • 4 bay leaves
  • 5 garlic cloves
  • 3 teaspoons ground cumin
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • ½ teaspoon ground cloves

👩‍🍳 Step-by-Step Instructions:

1. Season the Meat

Sprinkle salt on all sides of the beef chunks. Rub it in well with your hands.

2. Sear the Meat

Heat your pan or griddle over medium-high heat. Add a little oil. When it’s hot, place the meat on the pan and cook it for 3 minutes on each side. Don’t move it around—let it get a nice brown crust.

Do this for all the meat pieces.

3. Make the Sauce

While the meat is cooking, prepare your sauce:

  • In a blender, add: garlic, cumin, oregano, ground cloves, salt, pepper, chipotle chiles, lime juice, and vinegar.
  • Blend until smooth.

4. Add Everything to the Crock-Pot

  • Place your seared meat into the crock-pot.
  • Pour the blended sauce over the meat.
  • Pour 1 cup of chicken broth into the blender to clean out the leftovers, then pour that into the crock-pot too.
  • Add bay leaves and the halved white onion on top.

5. Cook the Barbacoa

  • Cover the crock-pot.
  • Cook on high for 4 to 4.5 hours (time may vary slightly depending on your crock-pot).
  • After cooking, the meat should be very tender and fall apart easily.

6. Shred the Meat

  • Take the meat out and let it cool a bit.
  • Remove the bay leaves and onion.
  • Shred the meat using forks.
  • Put the shredded meat back into the juicy broth in the crock-pot.
