Ingredients:
- 1 can of pink salmon (about 15 ounces)
- 1/4 cup of chopped green bell pepper
- 1/2 cup of chopped onion
- 1 teaspoon of Creole seasoning
- 1 tablespoon of Old Bay seasoning
- 1 tablespoon of garlic powder
- 2 tablespoons of parsley flakes
- Fresh black pepper to taste
- Optional: 1/4 teaspoon of cayenne pepper (for a little spice)
- 1/4 cup of flour
- 1/4 cup of cornmeal
- 1 slightly beaten egg
- 3 tablespoons of mayonnaise
- Olive oil spray (or any oil you prefer)
Instructions:
1. Prepare the Salmon:
- Drain the juice from the can of pink salmon. Remove the skin and any visible bones (you can leave the bones in if you prefer, as they’re edible).
- Use a fork to break up the salmon into small, manageable pieces.
2. Add Veggies and Seasonings:
- Mix in the chopped green bell pepper and onion with the salmon.
